At night, the acidity levels of the olives are more stable and better. Picking the olives when they're cool reduces the energy needed to cool them before they can be pressed. Resulting in a tasting profile that is next level. Perfect for classics dishes such as bruschetta – or for enjoying pure with fresh rustic bread and some Fleur de Sel.
